The Itsy Bitsy Teenie Weenie Yellow Polka Dot Bikini song is one of my favorites... so I always think of zucchini when I hear it, and it gave me the inspiration for this light side dish salad. Perfect any time of year! The fresh corn kernels are the 'yellow polka dots' for the zucchini.

Enjoy this zucchini side dish on a hot summer's day. This light and refreshing salad tastes like pure summer. The fresh zucchini and corn pair nicely. With the tomatoes, it's a melody of summer veggies. They're dressed with a light, slightly sweet, and tangy dressing. Sprinkling cilantro and green onions on top adds a pop of freshness. A delicious warmer weather side dish that would be perfect alongside grilled fish, shrimp, or chicken.

  • Whisk olive oil, lemon juice, honey, vinegar, salt, and pepper in a bowl.
