We adored the berry mixture in these three berry shortcakes. The combination of strawberries, blueberries, and raspberries gives this dessert a nice summery feel. This is a great shortcake recipe that's fluffy and slightly sweet once baked. Sprinkling sugar on top makes a crunchy top. The whipped cream is rich and creamy with a little touch of tang from added cream cheese. When the fresh fruit is combined with the whipped cream and shortcake, this dessert has a patriotic feel so it's great for a Memorial Day, Fourth of July, or Labor Day cookout. Put all the elements out and guests can assemble their dessert.

Ingredients For three berry shortcakes

  • 2 1/4 c
    all-purpose baking mix
  • 3/4 c
    plus 3 Tbsp confectioners' sugar, divided
  • 2/3 c
    plus 1 Tbsp milk, divided
  • 1 Tbsp
    sugar
  • 2 c
    whipping cream
  • 4 oz
    cream cheese; softened
  • 2 tsp
    vanilla extract
  • 2 c
    fresh strawberries, sliced
  • 2 c
    fresh blueberries
  • 1 c
    fresh raspberries

We did use a 2 inch cutter for these and the biscuits are small. We figured each guest would eat 2 biscuits. Feel free to use a larger biscuit cutter, you'll just get fewer biscuits.
  • Combine baking mix, 3 Tbsp confectioners' sugar, and 2/3 cup milk in a bowl. Mix well.

    For the filling, beat the whipping cream until soft peaks form. Add the cream cheese 1 Tbsp at a time while beating.
