Ingredients required

2 eggs, 2 tbsp oats, ¼ cup chopped mushrooms, 1 onion, 1 green chili, 1 tbsp coriander, salt to taste, pepper to taste, 2 tbsp milk, and 1/2 tsp oil

Step 1

In a small bowl, mix oats with 2 tbsp of water. Let it soak for 5–10 minutes until slightly softened.

Chop the veggies and set them aside.

Step 3

Beat the eggs in a bowl. Add the soaked oats, salt, pepper, chili, coriander, and onions. Mix well.

Step 4

Heat ½ tsp oil in a non-stick pan. Add chopped mushrooms and cook for 2–3 minutes until slightly browned.

Step 5

Lower the heat of the pan, and pour the egg-oat mixture over the mushrooms in the same pan. Spread evenly.

Cover with a lid and cook on low for 3–5 minutes until it is evenly cooked. Flip gently and cook for another minute.
